Salmon and Tomato

Suits all phases – Serves 4

Ingredients

4 fresh salmon fillets, skin on
6 medium sized tomatoes, finely chopped
1 tsp finely chopped parsley
1 tsp finely chopped coriander
1 tsp finely chopped basil
2 Tbsp lemon juice
Salt and pepper to taste

Method

  1. Preheat the oven to 180°C. Place the tomatoes, herbs and lemon juice a bowl. Mix thoroughly.
  2. Put the salmon fillets with their skin side down on a greased baking tray. Top with the tomato mixture, season, and bake for 15 minutes.
  3. Serve with a salad or vegies of choice.
