Ingredients
4 salmon fillets
Sea salt and freshly ground black pepper
1 ripe avocado
1/3 cup coconut milk
1/4 cup fresh coriander, minced
1 Tbsp fresh lime juice
Zest of 1 lime
1 tsp garlic powder
1 tsp onion powder
1 Tbsp lime zest
Method
Preheat grill to medium heat. Season the salmon with salt and pepper and sprinkle with the lime zest. Grill the salmon for 12-15 minutes.
Meanwhile, place the avocado, coconut milk, coriander, lime juice, garlic powder, onion powder and salt and pepper to taste in a blender, and pulse until creamy. Add extra coconut milk for a creamier consistency, 1 Tbsp at a time.
Serve the salmon topped with the avococo sauce, alongside a garden salad.
