This delicious satay sauce is a must for lovers of Asian foods. Add extra vegies to the recipe to make it a true one-dish meal. Serves 4
500g chicken mince
1 clove garlic, minced
350g green beans, cooked
4 spring onions, chopped
1 Tbsp natural peanut butter
1 Tbsp Thai red curry paste, or to taste
1 Tbsp grated ginger (or 1/8 tsp ground ginger)
1 tsp fish sauce or gluten-free soy sauce
1/2 cup coconut milk
- Make the sauce: in a small bowl mix together the peanut butter, curry paste, ginger, fish (or soy) sauce and coconut milk.
- In a large skillet or wok, brown the chicken with the garlic: drain the grease.
- Add the green beans. Pour in the sauce and mix well. Cook until the vegetables are heated through.
- Sprinkle with green onions and serve.
