2 Tbsp olive oil
1.25kg diced pork
4 cups gluten free chicken stock
1 x 400g can diced tomatoes
1 large swede, peeled & cubed
1 onion, chopped
2 cloves garlic
1 Tbsp chilli powder
1 1/2 tsp dried oregano
1 tsp salt
1/2 tsp cumin
1/2 tsp black pepper
1 head broccoli, cut into florets
2 bunches pak choy (or similar)
8 lime wedges
Combine oil, pork, stock, tomatoes, swede, onion, garlic, chilli powder, oregano, salt, cumin, and pepper in a large slow cooker. Stir to mix well.
Cook on low for 7½ hours.
Add broccoli and pak choy to the slow cooker and cook for a further 30 minutes.
Season with additional salt and pepper to taste and serve with lime wedges.
