Suits all phases – Serves 4
500g lamb mince
1 onion, finely chopped
4 cloves garlic, finely chopped, divided
8 sprigs finely chopped mint leaves, divided
3 tsp finely chopped parsley
Salt and pepper to taste
½ cup natural yoghurt
Zest and juice of half a lemon
- Place the lamb mince in a mixing bowl. Add the onion, most of the garlic, 3 tsp chopped mint, and the parsley. Season with salt and pepper to taste. Divide the mixture into 8 and shape each portion into round burgers.
- Place on a hot barbecue or under the grill and cook for around 8-10 minutes. Turn regularly until cooked to your taste.
- Combine the yoghurt, lemon zest and juice, remaining garlic, and remaining mint in a bowl and mix well. Season to taste with salt and pepper.
- Serve lamb burgers with the mint yoghurt, alongside a Greek Salad.
