Here’s a delicious, 3 minute meal that you can prepare at lunch-time and eat for dinner, or why not cook it at the weekend and reheat for a weeknight meal? Serves 4


1 medium onion, sliced
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp pepper
8 lamb loin chops
2 cloves garlic, minced


  1. Place onion in a slow cooker. Combine the oregano, thyme, garlic powder, salt and pepper; rub over the lamb chops. Place the chops over the onion and top with garlic. Cover and cook on low for 4-6 hours or until the meat is tender.
