This modern combination of ingredients is an absolute delight, with a strawberry-flavoured dressing as well as strawberry slices through the salad. Serves 4


1 cup hulled and sliced strawberries
2 Tbsp white wine vinegar
2 Tbsp finely chopped fresh basil leaves
1 Tbsp olive oil
to taste, salt and freshly ground black pepper
150g baby spinach, washed and dried
1/4 cup crumbled goat cheese
1/4 cup slivered almonds


  1. To make the dressing, add 3/4 cup strawberries, vinegar, basil, olive oil, salt and pepper to a food processor or blender and puree until smooth.
  2. Toss the spinach, cheese, almonds, and remaining strawberries in a large bowl and lightly drizzle with the dressing.
