Spinach Surrender

Suits all phases – Serves 4

Ingredients

4 eggs
75g grated cheddar cheese
2 slices of ham, cut into small pieces
290g fresh spinach, finely chopped

Method

  1. Preheat the oven to 200°C. Beat the eggs in a mixing bowl. Add the cheese, diced ham, and chopped spinach and mix well. Place in an ovenproof flat dish and bake in the preheated oven for 25 minutes.
  2. Remove the dish from the oven and allow to cool a little before cutting into 4 wedges. Serve with a salad of cherry tomatoes, cucumber and capsicum.
