2 Tbsp coconut oil
500g beef round steak, about 1 cm thick
1 medium onion, sliced
1 medium green capsicum, sliced
1/4 cup water
1/4 tsp garlic salt
1 head broccoli, cut into florets
1 bunch bok choy
1 Large handful green beans, top and tailed
1 Freshly ground black pepper
- Cut steak into slices.
- Add oil to a large skillet over medium-high heat. Add the meat and onions and cook until the onions turn slightly translucent.
- Stir in the green capsicum, water and garlic salt. Cook another 5 minutes, stirring constantly.
- Meanwhile, bring a pot of water to the boil and steam the broccoli for a couple of minutes. Add the bok choy and green beans and steam for three minutes.
- Season the steak mixture with black pepper and serve on a bed of bok choy with a side of broccoli and green beans.
