ICT Reset: Suits phases 1-4


  • 500 gm plum tomatoes, sliced in half
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 2-3 medium shallots, finely chopped
  • Fresh basil, chopped
  • Salt and pepper to taste


  1. In a large bowl place the cut tomatoes and pour the oil and balsamic vinegar, plus the shallots, basil and salt and pepper. Toss together.
  2. Cover the bowl and refrigerate for two hours or more.
  3. Serve straight from the fridge.
