ICT Reset: Suits phases 1-4
- 500 gm plum tomatoes, sliced in half
- 2 Tbsp extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 2-3 medium shallots, finely chopped
- Fresh basil, chopped
- Salt and pepper to taste
- In a large bowl place the cut tomatoes and pour the oil and balsamic vinegar, plus the shallots, basil and salt and pepper. Toss together.
- Cover the bowl and refrigerate for two hours or more.
- Serve straight from the fridge.
