750g minced beef
2 Tbsp butter
½ (400g) can crushed tomatoes
60g pickled jalapeños (or roasted chillies)
250g grated cheddar
1 cup sour cream
1 scallion, finely chopped
2 tsp chili powder
2 tsp paprika
1 tsp cumin powder
1 – 2 tsp onion powder or garlic powder
1 pinch cayenne pepper
1 tsp salt (optional)
- Preheat the oven to 200°C. Fry the mince in butter, and add taco seasoning and tomatoes.
- Place the mince mix in a baking dish with jalapenos and cheese on top. Bake on upper rack in oven for 15–20 minutes.
- Chop the chives finely and mix in with the sour cream.
- Serve with chive sour cream, guacamole and a green salad.
