Serves 4


750g minced beef
2 Tbsp butter
½ (400g) can crushed tomatoes
60g pickled jalapeños (or roasted chillies)
250g grated cheddar
1 cup sour cream
1 scallion, finely chopped
guacamole (home-made)
Taco seasoning
2 tsp chili powder
2 tsp paprika
1 tsp cumin powder
1 – 2 tsp onion powder or garlic powder
1 pinch cayenne pepper
1 tsp salt (optional)


  1. Preheat the oven to 200°C. Fry the mince in butter, and add taco seasoning and tomatoes.
  2. Place the mince mix in a baking dish with jalapenos and cheese on top. Bake on upper rack in oven for 15–20 minutes.
  3. Chop the chives finely and mix in with the sour cream.
  4. Serve with chive sour cream, guacamole and a green salad.
