Reset: Suits all phases
Great Shape: dairy, vegetable, fat

Ingredients

2 Tbsp olive oil or butter
1/4 cup chopped onion
2 cloves garlic
1 (800g) can diced tomatoes
1/2 tsp salt
1/8 tsp black pepper
1/2 tsp dried oregano
1 tsp dried basil
1 Tbsp tomato paste 
3 cups water
1/3 cup cream
2/3 cup feta cheese, crumbled


Method

  1. Heat olive oil or butter over medium heat in a large pot. Add the onion and cook for 2 minutes, stirring frequently. 
  2. Add the garlic and cook for 1 minute. 
  3. Add tomatoes, salt, pepper, oregano, basil, tomato paste and water. Bring to a boil, then reduce to a simmer and cook on medium heat for 20 minutes. 
  4. Using an immersion blender, blend until smooth. 
  5. Add the cream and feta cheese. Stir gently and cook for 1 more minute.
  6. Taste and season if needed.
