Ingredients
400g can tuna in olive oil
½ cup mayonnaise
2 Tbsp sour cream
1 Tbsp capers
½ leek, finely chopped
½ tsp chili flakes
salt and pepper
1 cos lettuce, washed and leaves separated
½ cucumber, chopped
2 tomatoes, chopped
Small handful snow peas, sliced lengthways
Method
- Drain the tuna, then flake to ensure there are no large clumps.
- Combine the tuna, mayonnaise, sour cream, capers, leek, chilli flakes and season with salt and pepper and mix well.
- Place the cos leaves on serving plates. Spoon the tuna mixture onto the leaves, then top with cucumber, tomatoes and snow peas.
