Reset: Suits all phases
Great Shape: protein, vegetable, fat

Ingredients

400g can tuna in olive oil
½ cup mayonnaise  
2 Tbsp sour cream
1 Tbsp capers
½ leek, finely chopped
½ tsp chili flakes
salt and pepper
1 cos lettuce, washed and leaves separated
½ cucumber, chopped
2 tomatoes, chopped
Small handful snow peas, sliced lengthways


Method

  1. Drain the tuna, then flake to ensure there are no large clumps.
  2. Combine the tuna, mayonnaise, sour cream, capers, leek, chilli flakes and season with salt and pepper and mix well. 
  3. Place the cos leaves on serving plates. Spoon the tuna mixture onto the leaves, then top with cucumber, tomatoes and snow peas.
