Ingredients
½ punnet cherry tomatoes
1 green capsicum
2 cloves garlic
4 Tbsp olive oil, divided
1 Tbsp tomato paste
3 Tbsp chopped fresh dill
Salt and pepper
750g peeled prawns
200g feta cheese
Method
Heat the oven to 200°C. Finely chop tomatoes, capsicum, and garlic, and sauté in 1 Tbsp olive oil.
Add tomato paste and a few tablespoons of water and let simmer for a few minutes.
Add dill, salt, and pepper to taste. Set aside.
If using raw prawns, fry them in oil for a couple of minutes on each side. Put cooked prawns in a baking dish and cover with the tomato sauce.
Top with crumbled feta cheese and remaining olive oil. Bake in the oven for 10 minutes and serve immediately.
