Vanilla, Apple & Raspberry Mousse Dessert

SERVES 6

Suits phases 2 – 4

Ingredients

  • 200ml water
  • 1/2 Cup Greek Style Yoghurt
  • 6 scoops HI Shaken Jamaican Vanilla Bean
  • 1 stewed apple (See tip) If on Phase 2 replace with passionfruit
  • 1 cup frozen raspberries 

Method

  1. Combine water and yoghurt in a bowl and mix.
  2. Add the SJ Protein powder and mix together with an electric hand mixer.
  3. Add the apple and frozen raspberries and mix through.  If you want a smooth mix, continuing blending until fruit pieces are broken down.
  4. Pour into serving glasses or ramekins. Refrigerate for a few hours until set.

Tip: Stew apple in microwave for 5 mins with hot water and a little cinnamon – then blend.

Serving suggestions: 

  • As a breakfast choice add a sprinkling of Healthy Inspirations Protein muesli 
  • As a dessert a teaspoon of whipped cream and raspberry to decorate.
